This micro-lot coffee is produced by Fray David at his farm, Rosal, located in Urrao, Colombia. The coffee is of the Chiroso variety and is processed using the traditional "cochadas" method, where cherries are collected daily, pulped, and fermented in water for 7-8 days before being fully washed and dried. This coffee offers a juicy acidity with flavor notes of sumo orange, granadilla, peach, and maple syrup sweetness.
