This coffee is a Red Stripe Bourbon variety from Finca La Piragua in the Acevedo region of Huila, Colombia, grown at an altitude of 1600-1800 meters. Produced by Alexander Vargas, this lot underwent an anaerobic natural process, including 60 hours of fermentation in airtight barrels followed by 18 days of drying in sheds. This light roast offers a vibrant flavor profile with notes of papaya, cherry cola, black currant, and rosehips, characterized by a naturally creamy texture.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
