MOK Specialty Coffee

About This Coffee

This is a 100% Brazilian single-origin coffee from Fazenda Santa Clara in Mantiqueira de Minas. The farm is owned by the Pereira family, who have been cultivating coffee for over a century. The farm spans 350 hectares at elevations between 930 and 1050 meters above sea level. Mechanical harvesting is used with highly sensitive tools to pick only fully ripe cherries. In selective areas, manual harvesting with electrical combs (derricadeiras) strips ripe cherries from trees through vibration. After harvest, cherries are dried in thin layers on patios under direct sunlight and turned frequently to ensure maximum cup quality. This coffee is great as espresso and for milky drinks.

MOK Specialty Coffee

Founded in 2012 by Jens Crabbe, MOK began as a small roastery and bar in Leuven before expanding to Brussels. Jens, a two time former Belgian Cup Tasters Champion, is driven by a desire to explore the full potential of coffee flavor. MOK's philosophy is centered on an omni roast approach, where they develop one ideal roast profile for each coffee that works for both filter and espresso. This method aims to showcase the coffee's inherent sweetness and terroir with maximum clarity and minimal roast influence.
