This coffee is from the El Carmen estate in El Salvador, located near the village of Ataco in the heart of El Salvador's protected forest corridor. The estate was founded in the mid-19th century and is managed by the fourth generation of the Alfaro family. This lot features the new Elite Bourbon varietal, planted in 10 hectares of El Carmen's land. The bean is longer than normal Bourbon with improved quality. Coffee is produced under approximately 60% shade cover. Cherries are hand-picked when perfectly ripe, de-pulped the same day, naturally fermented, washed with pure spring water, and sun-dried on clay patios. Beans are stored in parchment in wooden silos and rested for a minimum of 60 days under controlled conditions.
