This coffee undergoes a complex processing method involving an initial 48-hour anaerobic fermentation, followed by depulping and a second 72-hour anaerobic fermentation. The beans are then washed and dried on raised African beds under a light-blocking canopy for 20 days. The flavor profile features notes of mango, berries, and nutmeg.
