A decaffeinated single origin coffee from El Vergel Estate, run by Elias and Shady Bayter in the Tolima region of Colombia at 1500 MASL. The coffee uses Red and Yellow Caturra varieties and is decaffeinated using Ethyl Acetate derived from locally grown sugar cane — a caffeine-specific solvent with a low boiling point that preserves flavor integrity. Tasting notes include vanilla, panela, dark chocolate, apple, and stone fruit.
