This coffee is a Pink Bourbon variety from the Santa Mónica farm in the Quindío region of Colombia, grown at an altitude of 1450-1500 meters. It undergoes a unique honey process involving a 72-hour anaerobic fermentation with wine yeast and fresh peaches, followed by drying on raised beds with additional peaches. The result is a juicy, perfumy cup with distinct flavor notes of peach gummies, apricot jam, sweet nectarine, and rose, offering a balanced and expressive profile.
