This Caturra coffee from Quindío, Colombia, grown at 1750–2000 meters altitude on Finca El Placer by producer Sebastian Ramirez, undergoes a distinctive two-stage anaerobic co-fermentation. The first stage ferments whole cherries with wine yeast for 120 hours, followed by 72 hours of mucilage fermentation with CO₂ injection, watermelon, and fruit glucose. The honey process preserves body and texture while the layered fermentations build aromatic complexity. Tasting notes include watermelon, floral, red apple, and citrus with a bright, refreshing finish.
