This decaf coffee is from Granja Paraíso 92 in Cauca, Colombia, produced by Wilton Benitez at La Macarena farm. The Red Bourbon variety is grown at 1900-2100 meters altitude on volcanic soils near the Puracé Volcano in Piendamó. Cherries undergo anaerobic fermentation with sugar cane juice, followed by EA sugarcane decaffeination using natural ethyl acetate from Colombian sugar cane by-products. The coffee is dried at a constant 38°C. Flavor notes include sugar cane, cranberry, cherry, and berries. The farm uses laboratory-driven precision processing with UV-light sanitization and stainless-steel anaerobic bioreactors.
