This Geisha coffee is from Las Marias Estate in Pijao, Quindio, Colombia, owned by the Giraldo family. The farm is located at high elevation, surrounded by native forest in the heart of the Andes Mountains. The Geisha seeds were sourced from Panama and carefully cultivated. Cherries are picked at peak ripeness when brix grade exceeds 22. The Rio Dulce lot undergoes a double washed process with two 24-hour anaerobic fermentations: first in closed tanks after pulping, then in dry closed tanks after washing, followed by a final wash and drying on raised beds. Processing takes place at the Cafe 1959 Facilities at La Clarita Drying station.
