This competition lot is produced by Jose Lasso from El Diviso farm in Pitalito, Huila, Colombia at 1850 meters elevation. The coffee features the Sudan Rume variety, an heirloom Arabica originally discovered in South Sudan, prized for disease resistance and adaptability. Cherries undergo an elaborate processing method called Natural 'Floral Symphony' involving initial 12-hour anaerobic fermentation at 16-18°C, followed by 36 hours of controlled oxidation at 36°C, a second 36-hour anaerobic fermentation in a Biomaster fermenter, 24-hour submersion in water and mossto mixture, and thermal shock at 60°C. Drying is performed in a temperature-controlled stainless steel dehumidifier. The cup profile features tangerine, berry candy, and mint notes.
