A single-origin Colombian coffee grown by Jairo Arcila at Finca Santa Monica in Armenia, Quindío, at 1,400–1,450 meters altitude. This 100% Castillo variety micro-lot undergoes a complex natural processing with white wine fermentation: 30 hours of dry anaerobic fermentation, drying on raised beds to 20% moisture, then re-bagged in Grain Pro for 80 hours of natural yeast-driven fermentation, followed by final drying on raised beds to 10.5% moisture.
