A single-origin Colombian coffee from Finca San Jose (Monsalve Botero) in Caldas at 1750m. Castillo variety beans are fermented and washed, then matured in rum oak barrels for up to three months, producing pronounced rum and brandy aromatics with bright green apple and cherry acidity and a lingering ganache-like sweetness. Light roast with a refined, delicate body; released as a limited, innovative lot.
