The coffee is processed using a natural method where whole cherries are carefully dried with the fruit intact, allowing sugars and fruit compounds to interact with the bean throughout drying. Pink Bourbon is grown where elevation and climate support slow cherry development and high sugar concentration. The farm produces carefully separated microlots with emphasis on showcasing varietal character.
