The coffee undergoes a unique processing method where cherries are held for 28 hours, then de-pulped and held in containers for approximately 48 hours before being washed and dried for at least 20 days. This careful post-harvest processing is conducted at the family's main plot, utilizing a covered greenhouse for drying.
