Rogue Wave Coffee

About This Coffee

Finca Rosita is located in the Illimani community in the Caranavi region of Bolivia. The farm covers 32 hectares dedicated to coffee cultivation. This Caturra variety coffee undergoes anaerobic natural processing, where the coffee is fermented in completely sealed tanks without oxygen for 4 to 5 days. Fermentation is monitored using a brix meter, with the coffee removed from tanks when sugar content reaches 8 brix. The coffee is fermented and dried in cherry, with drying time varying from 20 to 25 days depending on weather conditions. The farm is named in honor of Rosa Angelica Aramayo, matriarch of the Valverde-Aramayo family.
