The cherries (Kona Typica, Red Bourbon, SL34) undergo a cinnamon co‑fermented honey (pulp‑dried) process — fermented 24 hours with cinnamon bark, depulped, then sun‑dried with mucilage intact. Light‑medium roast with tasting notes of cinnamon roll, brown sugar, warm spice, apple, citrus, and honey. Available whole bean or ground in multiple sizes.
